I'm pretty sure everyone loves Chinese food, or at least most people do. This recipe is so easy and delicious. I tweaked this recipe just a bit. I used up some tomatoes that were getting a little over-ripe. It added another layer of flavor to the dish. I also used some leftover pork tenderloin rather than cooking the pork from scratch. When I make Chinese I pretty much add whatever is in the refrigerator. It's a great way of cleaning out all the leftovers you may have.
Here's what you will need for this recipe...
Ingredients:
- onion
- green bell pepper
- pork
- vegetable oil
- pineapple chunks in juice
- white vinegar
- soysauce
- brown sugar
- salt
- cornstarch
- pre-cooked rice
- tomatoes (opt)
Let's Make Some Sweet and Sour Pork...
First, gather all of your ingredients. Chop the onion and either julienne the green pepper, or cut them into 1"x1" pieces. It all depends on if you want it chunky. Whatever works for you. Then drain your pineapple, saving the juice for later.
Next, you are going to cut the pork tenderloin into bite size pieces. I had left over pork tenderloin that was already cooked. If you are starting from scratch with the meat, just add a few teaspoons of oil to a Wok or a large frying pan. Cook until lightly browned...about 5 minutes and set aside.
Place the onion and green pepper in the wok with a little more oil and cook until tender. Add the pork, green pepper, onion and pineapple back into the skillet. Mix together the pineapple juice, water, vinegar, soysauce, brown sugar and salt and pour over the pork in the skillet. Cover and simmer for 15 minutes. If you are using leftover cooked pork, just add the sauce to the wok. Bring to a boil and add the cornstarch slirry to the veggies and pork in the walk. Turn down the heat a little and stir until the slirry thickens the sauce and is bubbly.
...And here it is!
Serve over white rice. Add some frozen pot stickers or egg rolls or a salad and you have a complete meal. You can also add sesame seeds and green onion for varnish. It's a quick and easy dinner idea. So next time you have some left over pork tenderloin try this recipe. You won't be disappointed.
Sweet and Sour Pork Recipe
Ingredients:
- 1 onion chopped
- 1 green bell pepper, chopped
- 2 lbs. pork tenderloin or 2-3 cups cooked pork tenderloin (left over froma previous dinner)
- 1 T. vegetable oil
- 1-2 roma tomatoes (opt.)
- 1 (20-oz.) can pineapple chunks in juice
- 3/4 cup water
- 1/4 cup white vinegar
- 3 T. soy sauce
- 1/4 cup brown sugar
- 1/2 tsp salt or to taste
- 2 T. cornstarch
- 2 T. water
- 2 cups cooked rice
Directions:
- Heat oil in a large skillet or wok over medium heat. Add onion and bell pepper. Cook 5 minutes, until vegetables start to soften.
- Add chopped pork to skillet, cook until lighly browned, about 5 minutes - if using precooked pork, just cook until heated through.
- Drain pineapple; reserve juice. Combine pineapple juice, 3/4 cup water, vinegar, soy sauce, brown sugar, and salt; pour over pork in skillet. Cover and simmer 10 to 15 minutes.
- In a cup, cobine cornstarch and 2 tablespoons water; stir until smooth. Add cornstarch mixture and pineapple chunks to pork mixture. Cook over low heat, stirring constantly until mixture is thickened and bubbly.
- Serve over cooked white rice.
One Final Thought...
Such a simple, quick and yummy weeknight dish. Most of the work is just chopping the ingredients. I love an easy recipe, expecially when it's delicious! I do hope you try this recipe...you won't be disappointed!
