Orange & Tomato Salsa & Cinnamon Chips

What a fresh idea. A little tart, a little sweet, a little heat and everyone's favorite cilantro. How could you go wrong. Use as a compliment to chicken or fish or pork, or a dip for tortilla chips.... yummmy!

Handmade by Hoffy is a collection of recipes and craft ideas that I love. One of my favorite things is "salsa", all types. When summer comes and you have all the fresh veggies and fruits, there's nothing better than having some salsa around. I love salsa with chips, but, salsa is also a great compliment to fish, pork and chicken. Again the fresh taste of fruits and veggies added to meats or fish brings the taste of your entre' to the next level. I hope you enjoy this very easy recipe. I have also included a recipe for cinnamon chips...another great addition for fruit and veggie salsa.

Orange and Tomato Salsa Recipe...
Ingredients:
  • ½ cup orange segments, diced
  • 1 cup Roma tomatoes, diced
  • 1 Tbsp. red onions, small diced
  • 1 tsp. jalapeño, minced
  • 2 Tbsp. cilantro leaves, minced
  • 1/8 tsp. salt
    Instructions:
    1. Combine Sunkist fresh diced orange segments, tomatoes, red onions, jalapeño, cilantro and salt.
    2. Toss gently to mix thoroughly.
    3. Cover and refrigerate until ready to serve.
    Cinnamon Chips Recipe...
    Ingredients:
    •  1/2 C. sugar
    • 1 tsp. cinnamon
    • 15 small 6 1/2" flour tortillas
    • 6 T. melted butter
    Directions:
    1. Preheat oven to 350 degrees.
    2. In a small bowl combine sugar and cinnamon and stir to combine.
    3. Spray a baking sheet with nonstick cooking spray
    4. Place tortillas onto the baking sheet.
    5. Brush each with melted butter and sprinkle generously with cinnamon sugar mixture.
    6. Cut the tortillas into triangles or rectangles.
    7. Bake for about 8-10 minutes until light, golden brown. Allow to cool.
    One Final Thought...
    I think most people love salsas. I don't think it just has to be smashed tomatoes in a jar. This recipe is a great one for summer cookouts. Whether you use cinnamon tortillas or just plain tortilla chips, you can't go wrong. I love the tastes of summer...and fresh tomatoes and big juicy oranges together are a great couple.
