Scallop & Orange Spinach Salad

I love scallops! They are a little pricey, but for a special occasion or you are just making a salad like this, the cost is minimal. Using seafood in salads makes them extra special. I love to add a little heat to them with seasonings. It makes the whole salad pop!

Whether you are using shrimp, scallops, crab or lobster, the end results are always wonderful. Tomorrow night I'm making shrimp walking tacos. They are so good. I use a package of cole slaw with a lime and cilantro dressing and then add spiced up cooked shrimp. Oh what a great supper. It's also light, but filling. Next time you want to make something special, add some seafood to a salad, along with a baguette with garlic butter. Yummy, yummy and yummy!!!!!

Scallop & Orange Spinach Salad
I just posted another salad that I really love. It's a "Grilled Romaine with blue cheese and hot bacon vinaigrette". I think if you added the scallops to this salad it would be a wonderful add on.
Ingredients:
  • Small oranges
  • tablespoon olive oil
  • teaspoons low-sodium soy sauce
  • teaspoon honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/3 cup chopped walnuts
  • pound sea scallops
  • small red onion, thinly sliced
  • bag (6 ounces) baby spinach
Directions:
Grate zest from 1 orange into a small bowl. Cut peel from both oranges and slice flesh into segments; set aside. Squeeze juice from membranes into bowl with zest. Whisk in 1/2 tablespoon olive oil, soy sauce, honey and 1/4 teaspoon each salt and pepper.

One Final Thought...
Any salad can be made for a main course. If you add steak or fish to any salad, you have a well rounded meal. They are low in calories if you back off on the dressing, or if you use a low calorie vinaigrette, you have a perfect diet meal. It's filling and the flavors are so wonderful. In the summertime salads like this work great. They are quick, easy and full of great essentials for our bodies.
